Shakshuka

An Israeli favorite, shaksouka is a cheap, easy dish of eggs poached in a tomato sauce.

Sauté an onion (diced) and 4 cloves of garlic (chopped) in a little olive oil until soft. Add 1 28 oz can of crushed tomatoes, and season with black pepper, kosher salt, cumin, coriander, and paprika. Cover and simmer for 30 minutes.

Carefully crack 4 to 8 eggs into the sauce. Re-cover and poach for 5 minutes.

Scoop eggs and sauce onto plate, and serve with grilled (or toasted) crusty bread for sopping.
